I had all intentions of baking after work, but by the time I got home from work the energy to do so was no longer there. I’ll get around to baking in the next few days especially because I have a pantry full of cookie ingredients. Each year I bake Christmas cookies with my sisters and friends, this year I’ll do the same.
As I was planning my cookie baking day, I became curious about the origins of the Christmas Cookie. This is what I learned:
Modern Christmas cookies can trace their history to recipes from Medieval Europe biscuits, when many modern ingredients such as cinnamon, ginger, black pepper, almonds and dried fruit were introduced into the west. … Due to the availability of these utensils, recipes began to appear in cookbooks designed to use them.
